Very Berry Yummy!

Went to Publix and they have all their berries on sale this week and I couldn't resist. Made these two recipes on Father's Day and they were a huge hit!

Summer Berry Crisp

I used 4 types of berries in mine!

1/2 cup sugar
2 tbsp cornstarch
1 tbsp orange peel
2 tspn lemon peel
6 cups of assorted berries
2 tbsp orange juice
1 tbsp lemon juice



The oat crumble topping...
3/4 cup flour
1/2 cup dark brown sugar
1/2 tspn ground allspice
1/4 tspn salt
6 tablesoons butter (Use a pastry cutter to mix it all)
1/2 cup rolled oats


Bake for 45 minutes at 375 degrees in 2 quart baking dish

The end result. Serve it up with Vanilla Icecream, cool whip or just enjoy on its own!!!



Fresh Fruit Salad with Mint


Mix this all together and chill in the fridge:
1 1/2 cup hulled sliced strawberries
1 mango, peeled and cubed
1 cup fresh blueberries or blackberries (I used both)
2 tbsp orange juice
1 tbsp chopped fresh mint

We had a very relaxing Father's Day this weekend. Enjoyed the Karate Kid at the theatre and then had a yummy dinner at home...a nice relaxing day for dad!

Evan's Dance Recital 6/15/10

Last Saturday was the 24th Annual Scott Jones School of Dance end of year recital. The theme was ABC Disney, with Disney characters making up the alphabet for 26 routines. Then, the second half of the show was Dance Extravaganza with another 14 routines.

Evan was in "F" for Flounder (Hiphop routine), "H" for Hercules (Jazz routine) and "W" for Woody (Tap routine). Then, he also had an acro routine to Hoedown Throwdown. He did amazing in all four of them.

Then, 2 days ago we got a letter in the mail from his dance studio and he was selected to be in their Performing Group Level 1 for 2010-2011! What a compliment and an honor to have been selected! Only one other boy besides Evan made the performing team for his level, along with 24 other girls. Cant wait to perform at Disney and the Gator Bowl!

Run for The Pies 5k


This past saturday was the Nike Run For the Pies 5k at the Jacksonville Landing! What a fun event...they had free beer, free Chicago Pizza and a Pie eating contest. Also had a pie costume contest, which we entered (of course), unfortunately we didn't win, but we both did walk away with $25 gift cards!

We didn't run fast enough to earn a free pie, but that didn't stop Sarah and Heather (they just took one)!

Had an amazing 6 days with Jendy, one of my best friends from high school. She flew down from Nashville to have her first vacation in 5 years! I tried to show her all that this area has to offer!

2nd Grade bites the dust...

Evan had his 2nd grade end of year program today. I cant believe school will be out on three days and then summer will officially begin!

Never Quit Never Beaches 5k

Yesterday I ran in the Never Quit Never 5k Beach Run! Finished it in 38:18...definitely not my best time, but running on the sand is totally different than running on the asphalt. I placed 315th out of almost 750 runners.






Pretty In Pink-Maddie's 8th Grade Prom!

Maddie aka "Barbie Doll Legs", had her 8th grade prom this past Friday...I wanted to cry! In one more week we will be done with middle school and I will be the mother of a High Schooler!

She is taller than me even without those high heels!

This was the perfect dress! Another girl at the prom wore the same exact dress too and Maddie blew her away!

Memorial Day Weekend 2010

What a great 3 day weekend! Friday, the kids had swim team pictures and a potluck. Then Saturday, was the first swim meet of the season with the Oceanway Tsunami's. Evan and Maddie did great!

On Monday we went to Green Cove Springs, Fl destination Spring Park for their Memorial Day Riverfest! There were over 400 runners at this one (of course they ran out of shirts). Either the course ran long, or I need to recalibrate my iPod because it was off according to my Nike+.
